In 1993, Paul Boutinot began searching for a vineyard site to produce fine wine with a strong sense of place. His search led him to the Schapenberg slopes in the Cape, where Waterkloof was founded. The farm, nestled in the Helderberg, underwent major replanting by 2008, with half dedicated to preserving the region's natural fynbos. Waterkloof earned WWF Biodiversity & Wine Initiative Champion Status in 2008 and became a regenerative farm. In 2009, a state-of-the-art cellar, tasting room, and restaurant were constructed, marking Waterkloof’s global debut.
